Healthy Vegetable Soup Recipe

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • ½ cup celery, sliced
  • 2 tablespoons garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh oregano
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper
  • 4 cups vegetable or chicken broth
  • 3 cups fresh tomatoes, diced
  • 2 cups zucchini, diced
  • 1 cup yellow squash, diced
  • 1 cup cooked white beans
  • ½ cup fresh basil, chopped
  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the onion and celery for 5 minutes, until translucent.
  3. Add the garlic to the pot and sauté for 2 minutes.
  4. Turn the heat up to medium-high and cook the vegetables for another minute.
  5. Add the lemon juice to the pot and stir in any browned pieces on the bottom of the pan.
  6. Stir the oregano, salt, pepper, broth, and tomatoes into the mixture.
  7. Bring the soup to a boil, then immediately reduce the heat and simmer, uncovered, for 10 minutes.
  8. Add the zucchini, squash, and beans to the soup and simmer it for 5 minutes or until the squash is tender.
  9. Remove the soup from the heat and stir in the basil.
