Gather the ingredients for this Costco keto-wrapped chicken burgers recipe

All you need for these yummy keto chicken burgers are Folios cheese wraps, frozen chicken breasts, ready-made guacamole, ready-made salsa, and some fresh tomatoes. You can even use Costco fresh chicken breasts if that's what you've got — they'll need less time to cook.

In case you're not familiar with them, Folios cheese wraps are an incredible low-carb product that is made entirely of cheese. You can choose from Jarlsberg, Parmesan, and Cheddar, and you can't go wrong with any of these options. We used Parmesan for this recipe just because that's what we had on hand.

We'd like to see you challenge yourself to get all these ingredients and come out of Costco in the time it takes to make these chicken burgers. We bet it's not going to work. Why? Because they're THAT easy.

Thaw out the chicken for your Costco keto-wrapped chicken burgers

We designed this Costco keto-wrapped chicken burgers recipe around Costco individually packed frozen chicken breasts. We find it's the easiest way to ensure we always have a cheap, healthy protein option on hand that's been processed as little as possible.

If you are using frozen chicken breasts, we recommend defrosting them overnight the day before you are planning on making this recipe. Thawing out chicken will speed up the cooking time. To thaw out the Costco individually packed frozen chicken breasts, just place them on a plate in the fridge overnight. If you're shorter on time, they'll defrost in a couple of hours in the sink or in about 30 minutes if submerged in warm water.

But if you've some fresh chicken breasts instead, that's totally cool, too. Just skip to the next stage.

Slice and cook the chicken for your Costco keto-wrapped chicken burgers

Remove each chicken breast from individual pouch before cooking your Costco keto-wrapped chicken burgers. Slice thawed or fresh chicken in half, cutting across from the side, resulting in two thinner cutlets per breast. Season with salt and pepper.

Bring a pan to medium heat and drizzle it with oil (if you're using a nonstick pan, you can really minimize the oil). Cook for five to seven minutes per side until browned on the outside and cooked on the inside.

If you didn't have time to defrost the chicken, you can even cook it from frozen. If that's your situation, do not attempt to cut the frozen chicken. Remove the chicken from its plastic pouch and cook for 20 to 40 minutes, at least ten minutes per side. Once cooked, slice chicken breasts in half, cutting from the side, resulting in two thinner cutlets per breast.

Slice tomatoes and prep ingredients for your Costco keto-wrapped chicken burgers

This Costco keto-wrapped chicken burgers recipe requires fresh tomatoes, ready-made guacamole and ready-made salsa. Why? Because we found that including the fresh tomatoes really added a juicy, fresh note to our chicken burgers. It also replicated the flavor of biting into a burger topped with a nice slice of tomato. But if you don't have any tomatoes on hand, don't worry — you can totally skip them.

If you are lucky enough to have some nice, ripe tomatoes on your counter (and Costco has many types to choose from!), slice them into thin slices. If your tomatoes are on the smaller side, these slices can be a bit thicker.

Assemble your Costco keto-wrapped chicken burgers

Now let's assemble these Costco keto-wrapped chicken burgers. For each burger, start by laying one Folios cheese wrap on a cutting board, just like you would with a tortilla. Spread with two tablespoons of guacamole. Top with sautéed chicken breast. On the chicken breast, spread a tablespoon of salsa, and finish it off with three to four tomato slices.

To close our Costco keto chicken burger, imagine folding the wrap sort of like you would an envelope. Fold one part of the cheese wrap over the chicken, then cover it with the other side, making an open-ended burrito. Repeat with as many wraps as you'd like.

Serve your Costco keto-wrapped chicken burgers

These Costco keto-wrapped chicken burgers are served and eaten freshly made, so grab one with both hands and dig in! The hot, pan-fried chicken breast is going to melt the cheese wrap slightly, mixing with the creamy guacamole and the tangy flavor of the salsa. The whole thing is going to taste like a great cheeseburger without the bun.

If a bit of filling comes out from the sides, don't fret — being messy is part of the fun of eating a burger. A typical serving is one of these chicken burgers with a side, or go for two if you want to make them your full meal. Just note that Costco keto chicken burgers will not keep well — the cheese wrap will get soggy and fall apart if left for too long so only make as many as you're going to eat in a sitting.
